banana oatmeal muffins.
I actually made something I found on pinterest. I found a recipe for muffins that used oatmeal instead of flour... which works with my new diet better. Honestly my hubby was a little nervous about the whole thing but as it was cooking the banana "bread" smell was filling the kitchen even he was getting a little excited (and I did add chocolate chips to a few of them just for him). :)
Ingredients- 2 /1/2 cup oats (old fashioned, not quick cooking)- 1 cup plain low fat greek yogurt- 2 eggs- 3/4 cup sweetener of choice (I used honey)- 1 1/2 tsp baking powder- 1/2 tsp baking soda- 2 bananas (remember the riper the banana the better it is for cooking)Directions1.Β Preheat oven to 400 degrees. Spray tin with non-stick cooking spray or line 12 muffin tins with foil liners (paper liners don't work well with the non-flour mixes... foil liners are the better option if you don't want to just use non-stick cooking spray).2. Place all of the ingredients, including bananasΒ in a blender or food processor, and blend until oats are smooth.3. Divide batter among cupcake liners, and bake for 20-25 minutes, or until toothpick comes out clean. (in the Denver area approx. 23 min was prefect)4. Then enjoy or save them for breakfast! (after they cool a little of course)Jacob loved his chocolate chips ones- so you can chocolate chips too if you would like. I like the plain ones for breakfast with some strawberries. :)
